We harvest our Chardonnay from two vineyards - "Sapniq" and "Izbisht". The grapes

achieve good technological ripening, and the grapes are very well balanced in both

parameters, sugar and acidity. Harvest is performed by hand. We then employ a

cold maceration with temperatures between 50 - 54 F for 6 - 8 hours. The must is

then fermented in closed stainless - steel containers at a temperature of 59 F and

is fermented for 20- 24 days dependent of the must’s vineyard origin.
